A Superfoodie St. Patrick’s Day!

 

Hello everyone and Happy St. Patrick’s Day coming to you! Whether you’re Irish or not, the 17th of March often coincides with some sort of green themed celebration and sometimes, even prancing leprechauns! Now while I cannot promise you a rainbow let alone gift you with a pot of gold on this special day, I have a recipe that I’m sure will compensate for my lack of shiny coins. In sticking with the theme of green, I am sharing with all of you my superfood-tastic recipe for Avocado Bread! This loaf is flavourful, moist and full of healthy, nutrient dense ingredients; I truly believe you will be left feeling lucky after trying out the recipe!

Avocado Bread

Ingredients:

  • 1 ¾ cups whole wheat flour
  • 2 tbsp ground chia seeds
  • 2 tbsp ground flax seeds
  • ½ cup granulated sugar
  • ¾ tsp baking soda
  • ½ tsp salt

 

  • 2 medium avocados, mashed
  • 2/3 cup plain greek yogurt (0% works fine)
  • 2 eggs
  • 2 tbsp olive oil
  • ½ tsp vanilla extract

 

  • hemphearts to decorate, optional

 

Method:

Preheat oven to 350oC and prepare a 9×5” loaf pan with non-stick cooking spray and parchment paper. In a large bowl whisk together the dry ingredients. Set aside. In a smaller bowl, whisk together the wet ingredients until fully combined.  Gradually stir the wet ingredients into the dry, folding together just until combined. Pour the batter into the pan and spread evenly to reach all the edges. Generously sprinkle the top of the loaf with hemphearts before putting it in the oven. Bake for approximately 45 minutes or until toothpick tester comes out clean. Turn off the oven and cover with aluminum foil and let sit for another 30 minutes to settle. Remove from oven and place on cooling rack until cool to the touch. Slice and enjoy!
